The Joy of Healthy Eating

Having never really "gotten" the joy of healthy eating, I found myself too often pushing away from the kitchen table absolutely stuffed because of eating too much. The heavy, carbohydrate laden food wasn't healthy for me and each time I swore I will start the Atkins diet the next day.

Why do I do this to myself? I know that my daily diet needs to be made up of meals with nutrition and primarily made up of vegetables, yet I go for the bad stuff instead. I have no other vices aside from using recipes to make meals that lack in nutrition but are more fun and filling than healthy vegetables.

I enjoy eating the not so healthy food and even when I tried recipes that are better for me I would end up adding a few extras in for good measure. So much for a healthy diet! Just after Thanksgiving (when the turkey wasn't the only one stuffed) I formed a resolution to stock my kitchen with food to make healthy meals so I would be eating better food with more nutrition and preparing recipes that follow this diet plan as well.

Wonder of wonders it worked! Not only did I start to feel better immediately, but I found eating the right food provided the right nutrition which meant my body didn't crave the bad food anymore. My weight dropped without a diet outside of eating healthy food. I feel 100% better now that vegetables are my friends and my kitchen is vegetable friendly. I have more energy, think more clearly and enjoy this healthy lifestyle. It's nice to walk outside after dinner rather than walk to the cupboard for the Alka Seltzer.
